Southern Wind Inn "Cheesy Eggs" Dish
7 Eggs
1 Cup Milk
2 Teaspoons sugar
1 Pound Monterey jack or muenster cheese (grated)
4 Ounces cream cheese (cubed)
1 Sixteen ounce container cottage cheese (small curd)
6 Tablespoons margarine
1/2 Cup all-purpose flour
1 Teaspoon baking powder
Beat together the eggs, milk, and sugar. Add the cheeses and margarine. Mix well, then add the flour and baking powder. Pour into a greased 9x13 inch
glass baking. Bake in a 325 degree oven for 45 minutes or until knife inserted in the center comes out clean. This may be made ahead of time. If the pan
goes from refrigerator to oven, bake 60 minutes. Serve topped with sour cream & shredded cheddar or jack cheeses if preferred.
Baked Blintz
Filling:
1 6oz pkg. cream cheese (room temp.)
1 cup lowfat cottage cheese
1 egg beaten
1 tbsp. sugar
1 tsp. vanilla
Batter:
1/2 cup butter or margarine (room temp.)
1/3 cup sugar
4 eggs
1 cup flour
2 tsp. baking powder
1 cup plain yogurt
1/2 cup lowfat sour cream
1/2 cup orange juice
Preheat oven to 375 degrees. Butter and flour a large casserole dish (9x13). In a small bowl add cottage cheese, egg, sugar, and vanilla. Mix well and
set aside. In a large bowl, cream the butter and sugar. Add eggs one at a time beating well. Add flour and baking powder. Mix in sour cream and yogurt
and add orange juice. Pour half of batter into prepared casserole dish, layer in filling and then top with remaining batter. Bake 45-50 minutes until
lightly browned. Slice into squares and serve with a dollop of sour cream and fresh berry preserves.
Baked Egg Strata
1 tsp garlic powder
2 Tbsp olive oil
1 pkg Ore Ida Potatoes O'brien
1/2 jar fried peppers
4 cups colby/monterey jack cheese
16 eggs
16 ozs. heavy cream
Grease 10''x14" pan. Fry potatoes and fried peppers in olive oil and garlic powder until soft. In lg. bowl mix eggs and heavy cream. Pour potatoe mixture
in pan. Layer with cheese, pour egg mixture over top. Top with fresh pepper. Cook for 1 hr at 350 degrees.
Southern Wind Inn "Pineapple-Apple Bake" Dish
1 Large can crushed pineapple
1 Large can apple slices in water (not apple pie filling)
14 Large eggs
1 Tablespoon vanilla
1 Pint heavy cream
1 1/2 cups sugar
1 1/2 cups all-purpose flour
Brown sugar
Pre-heat oven to 350 degrees. Drain pineapple and apple slices and layer in a greased 10â€x14†pan. Use mixer to mix next 5 ingredients until smooth. Pour
over layered apples and pineapple. Sprinkle; with brown sugar and bake for 1 hour.
